What I Cooked: 5/5/15
Cinco de Mayo, when millions of Americans celebrate the widespread availability of Mexican food, beer and tequila, is one of the more fun of the manufactured US holidays. Mexican independence day, September 16, is the holiday the most Mexicans embrace and celebrate. Like most Americans, I like any excuse for a party and I love Mexican food, so a Cinco de Mayo fiesta was in order. On the menu: Fresh lime Margaritas, Carne Asada, Blackened Cod Tacos with red cabbage and mango slaw, Mexican Red Rice, Black Beans, salsa verde, sliced avocado, and Coconut Flan.
