What I Cooked: 5/3/15
Cinco de Mayo is upon us. In order to get in the spirit, I decided to try out Chicken Enchiladas in Salsa Verde from Pati's Mexican Table, by Pati Jinich. I have seen Pati cooking up different dishes on The Chew, and they always look delicious. I love the tanginess of tomatillo salsa, but have been reluctant to try to make it at home. Well let me tell you that I will never buy salsa verde at the supermarket again. It was so easy and quick to create in my own kitchen, and aside from the delicious flavor, you definitely reduce the sodium count, so the natural flavor of the tomatillos shines brightly through. I rounded out the meal with yellow rice and homemade lightly refried pinto beans. The salsa is so versatile that it could be used as a dip with chips, a sauce over grilled meats or fish, or even over eggs.
