What I Cooked: 5/6/15
Cinco de Mayo's a wrap, but I still have black beans, salsa verde, avocados and tortillas. And it's 9 am. Heat the tortilla and top with warmed beans and a fried egg. Garnish with sliced avocado, the salsa and a few crumbles of cotija cheese. A delicious, savory breakfast (or brunch) in minutes.
