What I Cooked: 2/27/17, Taco Monday

Yes, I know, "the Thing" is Taco Tuesday.  Well, Tuesday is Mardi Gras and we're not having tacos for Mardi Gras.  So, it's Taco Monday for us.  I have been taking advantage of the $2.99 Tuesday ground beef specials at our local Fresh Market.  I always have a pound tucked away in the freezer.

I usually use the Frontera taco sauce in the the handy white packets.  I guess other people like it too, because it was sold out.  Kroger seems to have noticed its popularity and created its own knock-off.  I'm sure the food police would argue that I should have made my own sauce, but to that I say: It's Monday, my car wouldn't start, and I was looking for a quick fix.

To round out this little meal, I sliced some fresh tomatoes and avocados, and doctored up some Rosarito refried pinto beans with salsa.  It was a crowd pleaser.
